Turkey Frying in 3 Simple Steps
George Vrattos demonstrates this most excellent method of deep frying a whole turkey in three easy steps.

Step 1: Prepare your turkey fryer. Add your choice of cooking oil to the halfway point in the fryer. If you're not sure how much oil to add. Place the turkey, while it is still in it's package, inside the fryer pot, and add water until it covers the turkey. Remove turkey. The level of the water is where you want to fill the pot when you add the oil.

Step 2: Bring oil to cooking temperature using an accurate thermometer. Oil should remain stable at 350-375 degrees Fahrenheit. Note: (peanut oil has a high smoke point so cooking at 375 is safer with this oil then with others)

Step 3: Pat the turkey dry to avoid splatter. Add the whole turkey. Bring oil temperature back to 350-375 degrees Fahrenheit. Cook for the amount of time as outlined in your instruction manual that came with the turkey fryer. If you tossed the manual out, set a general time to (cont.)

 

check turkey using the following timing method. At no more than 3 minutes per pound - A 15lb turkey should be nearing doneness in one hour (3min. X Turkey weight = total minutes, i.e., 3min(s) x 15lbs = 45 minutes. Test with an accurate thermometer at the meatiest part of the turkey. Turkey is done at 165 degrees. Remove and let stand covered with foil for 1/2 to 1 hour before slicing.

TIP: Mike Miller from W. Columbia, South Carolina writes in to say, "Always use an injector to juice that baby up". I will agree with Mr. Miller. It doesn't take too many minutes to over cook a fried turkey and dry it out into Turkey Jerky. Timing is the critical key to delicious success with this recipe!
