{"id":223,"date":"2011-06-08T09:05:54","date_gmt":"2011-06-08T14:05:54","guid":{"rendered":"http:\/\/www.outdoorcookingworld.com\/OutdoorCookingBLOG\/?p=223"},"modified":"2016-09-19T11:30:24","modified_gmt":"2016-09-19T18:30:24","slug":"carrot-soup-with-orange-juice-and-tarragon","status":"publish","type":"post","link":"http:\/\/www.outdoorcookingworld.com\/?p=223","title":{"rendered":"Carrot Soup with Orange Juice and Tarragon"},"content":{"rendered":"<p><strong>Delicious and delectable in one bowl of soup.<\/strong><\/p>\n<p>INGREDIENTS:<br \/>\n1 Tablespoon butter<br \/>\nOne 1 pound bag of classic-cut carrots<br \/>\n3\/4 cup chopped onion<br \/>\n3 cups low-sodium chicken broth<br \/>\n1\/2 cup orange juice<br \/>\n1 Tablespoon brandy<br \/>\n2 teaspoons chopped fresh tarragon<\/p>\n<p>DIRECTIONS:<br \/>\nMelt butter in a heavy large pot over medium heat. Add the carrots and onion; saute until the onion is soft, about 6 minutes. Add the broth. Cover and allow to come to a boil. Reduce the heat, uncover, and simmer until carrots are tender, about 10 minutes.<\/p>\n<p>Working in batches, carefully puree soup in a blender with the center top cap off or the lid slightly open (so the hot soup doesn&#8217;t build pressure and fly out and scald you). Puree until smooth. Return to cooking pot. Stir in the orange juice, brandy, and chopped tarragon. Simmer for 5 minutes more. Season with salt and pepper to taste.
