Kentucky Derby Day

Hey! the Kentucky Derby last year was a Big Ol' Barbecue Event extraordinaire! We had Mint Juleps during the race. Then we all kicked back on the outdoor lawn. Curt Walheim showed up, Kevin Burke, Tom Wilson and all the Good Eating Meeting crew and their lovely wives and girlfreinds. Oh and of course Barbie was there. You remember Barbie don't you. My big ol' oil drum horizontal Q.

I always say, Barbie is better than a girlfriend, she is always waiting for me when I get home in the back yard, she don't talk much and she FEEDS me!.


 

 

For a great pre marinated dish Iwent to my local Carniceria and grabbed a ton of marinated chicken and pork chops. I talked to my butcher there and coerced the secret to the great marinade he uses. I'd like to share it with you and I recommend it fully.

Fresh chicken halves and half inch pork chops are marinated separately in a wonderful red and spicy seasoning for at least half the day. The seasoning can be found at your local supermarket. And I reccomend it, liberally. It is "Chef Merito Steak & Meat Seasoning" (check out or Video Challenge). It also comes in versions for fish and poultry. A pound of meat requires about 2 teaspoons sprinkled over the cut after dousing with 2 teaspoons, oil or fruit juice. Give it a shot. I guarantee, you will be pleased!
