Court-Bouillon

Keeping your fish moist, when slow cooking on the grill, is as simple as keepng a container of Court-Bouillon with a ladle or grill brush at the ready.

Add liquid from this mixture to the bottom of your cooking utensil or apply it to the skin of fish in an aluminum boat. You can also use it to brush on to steaks to keep the surface moist and avoid over-cooking.

     

  • 1 pint water
  • 1 tablespoon lemon juice
  • few peppercorns
  • 1 sliced onion
  • 1 teaspoon salt
  • bouquet garni
