Bacon Wrapped Cod

 

One of the absolutely easiest recipes at Outdoor Cooking World.

  • 1 pound Cod fillet(s).
  • 4-8 parsley bouquets for garnish
  • 1 teaspoon chopped for addition at end of grilling
  • 6-8 pieces of bacon
  • 1/4 teaspoon paprika

Grill bacon strips until translucent, but not crispy. If you would rather pre-cook bacon using a skillet follow these instructions. Start bacon strips in a cold skillet and cook for 7-10 minutes on very low heat. Watch the bacon strips as you cook, you will want to cook the bacon slowly using the lowest heat possible. Cook bacon thoroughly but do not burn it. Bacon should be translucent and flexible enough to wrap around the cod strips.


 

 

Cut the cod fillet into 2 inch by 2 inch strips or squares, sprinkle liberally with paprika. As soon as bacon is cooked through, wrap each piece of cod with a strip of bacon and lay on the indirect heat side of the grill (or cook directly over coals with a sheet of foil beneath).

Grill 2-3 minutes on each side, check for doneness. If required, continue to cook until fish flakes easily with a fork (up to 4-6 minutes more).

Sprinkle chopped parsley over fish wraps before serving. Add garnish on serving plate.
